Polish Tomato Pepper Chicken
6 skinless boneless chicken breasts
1 cup chicken stock
one diced pepper
one diced onion
1/2 garlic clove
1/2 cup tomato sauce
1 tsp salt/1 tsp pepper
bread flour
margarine
1/2 tsp thyme
1/2 tsp basil
1/2 cup dogfishhead vodka
heat margarine in skillet -
lightly coat skinless boneless chicken breast with bread flour
brown for 8 minutes (4 or 5 per side)
toss in vegetables and spices
mix in chicken stock, splash in vodka and simmer for 10 minutes,
stir in tomato sauce, cover and simmer for 15 minutes or until thick
transfer to baking dish, cover with foil, back for an additional 30 min or until done to your liking.
